Breakfast
I'm always looking for something new for breakfast. I love fruit, but sometimes I would love a taquito. Of course that's a no-no so i have to look for alternatives. I tried Ani Phyo's Spanish Breakfast Scamble this morning. High in nutrition and very filling. She does post the ingredients in the video. I did modify it to my taste of course. I did not use almonds simply because I did not have any. I substituted cashews. I also used a spring green mix instead of spinach. It was very good. I don't think I'd eat it often only because I don't really like anything too heavy for breakfast, but even for brunch or lunch it would be great.
